I say A bowl full of cherries makes a delicious treat and spring snack!

So sweet, so good!

First Taste of Spring

It’s a little early yet but I have been getting so anxious for the taste of rhubarb, ESPECIALLY since this is the first year I have my own plants.

I have two of them and they are growing quite well, but not quite ready yet SO I went to Mom’s and took just a bit…enough for 2 cups so I could try a NEW recipe.

Yummmmmmm!!!! Just a taste BUT it is soooooo delicious!!!!!

I definitely will be making this again and can’t wait to make Rhubarb Custard Pie, Rhubarb Crisp, and Rhubarb Muffins. It’s soon time…

A Spring nuisance or a medicine for the body?

We have been enjoying beautiful weather this week. I have been trying to get outside and do some gardening. This time of year flowers and green plants are starting to sprout up and it’s exciting!! However, there is one colourful flower that isn’t so welcome, especially on our new lawn that we put in last year.

Dandelions! Hmm? Yep, those pretty yellow (flowers) weeds that pop up overnight on your lawn.

When we were living in China, we ate them! They were actually quite delicious. Ladies would spend hours in the parks gathering dandelion greens. And then cook them up. Maybe like we do fiddleheads here. Or…dandelion tea? It’s supposed to have many health benefits.

But here at home, we collect them…by the bucket full… BUT more because they are a weed invading our lawns.

My husband wants them GONE!!!! So we go outside and pull them out by the root…a little bit everyday. BUT We may have to rethink this a bit… Check out this site.

Cinco de Mayo

What is it?

It’s an excuse to have Mexican food! Yummos!

Actually Cinco de Mayo is Spanish for May 5th. And it’s a holiday in Mexico. A celebration held to commemorate the Mexican Army’s victory over French forces at the Battle of Puebla on May 5, 1862. It doesn’t mean much to us since we are not Mexican but we have Mexican friends and the date is written on the calendar and…like I said before it’s a reason to enjoy Mexican food. Tonight, it was fish tacos!

Cuba Vacation PART ~2

Relaxing at the resort was so lovely, BUT what else did we do?

We did a Jeep Excursion! Running around the mainland seeing some back country places.

DSC09555 DSC09559DSC09563 DSC09565 It was a full day…horseback riding, watching a cock fight ( not to the death, just a demonstration) beautiful gardens, cane tasting, cow milking, authentic Cuban lunch ( roast pig, rice & beans) swimming in a local water hole and chance to interact a bit with the locals. I even bought a piece of art from a Juan Carlos 😀

It was a full day and I ate plenty of dust but such a great way to see a bit of life in Cuba off the “resort island”

Cuba Vacation PART ~1

David & I love to travel. We love to travel South in the Winter to escape the cold. Believe it or not this is our very first time to stay at a resort for an entire week!

Our choice Winter getaway is cruising! This year, however,we are in Cuba. We are here for the wedding and it’s also a great way to see if we like all inclusive resort vacations. We flew into Santa Clara Airport and then took a bus to the resort. ( Our very own Wedding Group bus)

img_5045Just off Cuba’s north coast is the inviting resort destination of Cayo Santa Maria. With its white sand beaches, azure waters, and range of resorts, a vacation here is full of sunshine and relaxation. The area is known for its beaches, and has become famous for tourists that flock to its shores to step away from reality and enjoy the Cuban hospitality, heat, and landscape.

Cayo Santa Maria is an island on the north of Cuba in the Jardines del Rey archipelago, connected to mainland Cuba by a 48-kilometer causeway. With more than 10-kilometers of pristine, white sand beaches lapped by crystal clear blue waters.  Flights from Canada to Cayo Santa Maria arrive at the Santa Clara airport and then take a bus transfer approximately 1.5 hours from Cayo Santa Maria to the resort district on the island and across the causeway from mainland Cuba. Due to Cayo Santa Maria’s location, on an island just off of the mainland north coast of Cuba, the area is known for its resort community, but little else beyond the beach and poolside activities.

So…What to do a whole week in one place?

Well seeing as we were there for the wedding, a bit of time was spent making sure everything was ready for Saturday and then it was beach time, eating, pool time, eating, eating, entertainment, coffee and check mail, eating, and LOTS and LOTS and LOTS of walking. Melia las Dunas resort is large and so we spent a lot of time all week walking just getting to places.

An extra day

Who doesn’t love an extra day?

Especially if you’re on vacation or doing something fun. Not so great if you want days to fly by… What if your Birthday falls once every 4 years? I thought about that recently. Imagine being born on February 29th? Sure it would be fun to joke about your age…

This year is Leap year! 366 days this calendar year and an extra day in February.

Why not do something fun today to enjoy the extra day this year…it’s a beautiful day!

Friday Fun…Fifties Style!

David had the day off!! And it was a beauty!! This is February 19th folks.

Off we went for a little fun and adventure.

A little shopping in town, a little shopping in Mahone Bay, picked up a coffee and off to the city for little shopping and browsing and enjoying our time together.

We were having so much fun we missed lunch altogether. When it was close to dinner time we were both starving and decided to check out True North Diner in Bedford…it’s a fifties style diner complete with jukebox…so cool!

We loved the place. The atmosphere and the food was fantastic. Of course, I had to order a cheeseburger and root beer float.  David even saved room for coconut cream pie.

We will definitely go back to this spot and hopefully next time on a Wednesday or Thursday when the TND Gang are there and performing! so cool!!
